most nights and its a daily challenge to feed a house full of hungry folks. It would be so easy to drive
through and throw a foil-wrapped, round dinner at the crowd around the table, but I am learning that feeding an athlete (or scholar, or just about anyone) junk food doesn't give anyone the result they want. We might be filling the immediate hunger with a few dollars and minimal effort, but inevitably everyone regrets it. Too much salt, too much sugar and I can't keep a straight face when someone defends the french fry as a vegetable.
So I have, once again, become my best customer. Not only are we eating our own healthy "fast"
foods waiting for us in our own fridge, but a burrito tides a hungry teenage boy over after school until a real dinner; the kids take a salad, soup or leftover dinner to school instead of waiting in line for the high school's version of fast food; the breakfast burrito has streamlined our crazy mornings. I feel much better serving food with no preservatives, fresh ingredients and no added salt or sugar. For example, our breakfast burritos are made with locally raised eggs, real cheddar cheese, and turkey sausage or bacon.
I hope that Delicious Delivered is helping bring your family a healthier, more relaxed time around your dinner table too.
The texture of orichette ("little ears" in Italian) is everything I love about
pasta! Perfectly chewy and it has pockets that fill with delicious pesto.
Cubans, Spanish and Brazillians all fight over who invented this scrumptious dish, and all we can just sit back and enjoy it. Made with beef, lots of vegetables, raisins, capers and green olives and served over rice. A bit of a crazy combination, but complex and absolutely delicious! Stay paleo by subbing butternut squash. *
Sweet, tangy and tender chicken over jasmine rice. *
Layers of pasta, 4 Italian cheeses, pesto and alfredo sauce give this spin on traditional pasta so much flavor. Comes ready to bake.
Spicy Roast Chicken with Rhubarb Cucumber Salsa
After teaching a cooking class I was chatting with another instructor and we started discussing our deep love for rhubarb and its sadly short season. It is in season now and so, so delicious. The perfect cooling component to this complex and spicy roasted chicken.
Pork with Bacon Onion Jam
Slices of pork tenderloin topped with a sweet, salty and tangy onion jam.
