A few years ago I was asked to bring a vegetarian dish to a potluck and because of time constraints (procrastination) I had no time to go to the store. I made use of virtually everything in the vegetable drawer - kale, onions, potatoes and squash. I made a deep, complex sauce from tomatoes, garlic, 3 kinds of chiles, lots of latin spices and then topped it all with lots of cheese. When the same annual potluck came again this year 2 separate people asked me to bring the same dish as I had before. A beautiful accident turned into a crowd favorite!
I imagine that this is the French version of comfort food. Sitting in your pied-a-terre, staring out your window at the Eiffel tower in the rain, sipping a fine Cabernet Sauvignon. A rich beef stew with red wine, mushrooms and vegetables, served over buttered egg noodles.
Tender chicken breasts with a tangy honey Dijon sauce with mushrooms, bacon and cheese. Served with a side of steamed baby red potatoes.
A patty of delicious fresh salmon and veggies served on a bun with lemon-dill mayonnaise.
Chicken Basil Meatloaf
Moist and filled with flavor of fresh basil and spices.
